Chicken with Blueberry Wine sauce

What should I have with my blueberry wine? Chicken, again? This chicken with blueberry wine sauce is not like the same old chicken dinner.  This is the winner, winner chicken dinner.   It consists of chicken breasts wrapped in bacon, with a blueberry wine sauce to accompany it. 

Ingredients:

4 boneless, skinless chicken breasts.
4 slices of bacon
4 tbsps., clarified butter / 2-3 tsps olive oil
1/4 c refined flour.
½ tsp salt.
¼ tsp pepper.
2 tbsps., onion, minced.
¼ tsp cinnamon.
1 cup of blueberry wine. 

Method:
1. Sprinkle four chicken breasts with salt, pepper, and flour.  Wrap a slice of bacon around each   chicken breast
2. If preparing the recipe in a skillet, pour in 2-4 tbsps., clarified butter or 2-3 tsps of olive oil.
3. When you see the butter getting deep in color, then gently put the chicken pieces in the skillet.
4. Regulate the heat so that the butter doesn’t burn.
5. It is going to take a few minutes for each side of chicken breasts to cook properly. After about 5-7 minutes, you need to saute on the other side.  The bacon will cook with the chicken.
6. When chicken is cooked through (reaches an internal temperature of 165 F)  place on a plate and keep warm.

How to make blueberry wine sauce?

1. Take 2 tbsps of butter and melt in small pan.
2. Add 2 tbsps., minced onions and saute for a minute or so.
3. Add a cup of blueberry wine and boil it to burn off all the alcohol.
4. The liquid will become thicker, so now, you need to add a pinch of cinnamon in order to expose the spiciness of blueberries. 

After the blueberry wine sauce is made – you can put the chicken back in the sauce however the blue color on the chicken doesn’t always look right to me.  I like to have the sauce on the side and dip my chicken in it as I eat.  I like to slice potatoes, carrots, onions and saute them in some olive oil and bacon pieces in the same pan prior to making the chicken or with the chicken if the pan is large enough.

Blueberry wine spritzer’

Ingredients:
1. 4 oz., blueberry wine.
2. 4 oz., carbonated soda water.
3. ½-cup ice cubes.
4. 2 oz., fresh lemon juice.

Method:
1. Take a glass, add blueberry wine, ice, club soda, and lemon juice.  Taste add a little sugar if not sweet enough. Garnish it with fresh blueberries and lemon slices.
